Blueberry griddle cakes.....

I have a weakness for blueberries (we call them bluebies).... trouble is so do the blackbirds so we hardly ever get any!
But not anymore.... netting was put up around a few of the bushes and for the first time in about 4 years we actually had a crop! Yippeeee!
2 of the tiddlywinks and myself picked about a bucketfull! And I reckon there is another half bucket ready to ripen.....

Sunday afternoon was sunny and dry so there was only one thing to do...
The garden fire was lit, the garden bath was filled up and the fire also lit beneath it, the guitar was brought out for an airing, the tiddlywinks gathered warm and steamy from the bath..... and we had bacon and egg butties, followed by hot blueberry griddle cakes drenched in castor sugar hot from the pan....

As they cook the berries burst inside sending out little puddles of oozzy blueberriness...

And just incase you want to make some...
  • 1 mug of blueberries
  • 12 oz plain organic flour
  • 1 teaspoon bicarb of soda
  • 2 teaspoons cream of tartar
  • pinch of salt
  • 4 tablespoons of castor sugar
  • 2 free range eggs
  • 3/4 pint milk

Mix all of the dry ingredients in a big bowl. Pop in the eggs and gradually add the milk, whisking with a big balloon whisk as you go.

Heat a nut of butter and a drip of oil in a pan.... Moderate to high heat, dollop in spoonfulls of the mix and once they have risen and bubbled flip them over. They are cooked once springy to touch. Remove from the pan and dredge with sugar.

Eat one very quickly because the rest of the batch will have now disappeared as if by magic.....

  6. Having briefly sample those sweet berries-like no shop bought ones- I will only have to imagine what those cakes tasted of, im sure they were just heaven, and am sorry I missed out...!!! Ange x
